Shrimp Scampi
Introduction
This shrimp scampi recipe is delicious. Combining basil, garlic, butter, parsley, fresh cherry tomatoes, white wine and parmesan cheese can in no way be short of amazing, as long as it’s is done in right proportions.
Imagine twirling your fork and your pasta with slightly creamy, slightly tangy and buttery sauce. Shrimp scampi is a perfect dish to serve during cold and hot seasons, and because it’s so easy and quick to cook, it also makes perfect dish to serve during parties and potlucks.

Ingredients
2 garlic cloves, minced (if you are a garlic lover you can use 3)
1/2 to 3/4 lb. of shrimp
1/2 lb. of thin spaghetti pasta
1/2 cup of chicken broth
1/3 cup of white wine
1/4 cup of shredded parmesan cheese (more can be added)
some chopped parley for garnish
1/2 cup of basil
3 tablespoons of butter
3-4 tablespoons of olive oil
150 grams of tomatoes
salt
paprika and/or red pepper flakes
Instructions
Boil pasta in salted water until it becomes al-dente, slightly firm. Do not overcook it! Save 1/2 of cup of pasta water and set it aside. Drain the pasta in cold water immediately and set it aside.
Mix shrimp with some salt, 1/3 teaspoon of paprika.
Heat up 3-4 tablespoons of olive oil and cook shrimp in 2 batches for about 2 minutes on each side on very high heat. Cooking shrimp separately will make it slightly crispy and give it golden color. After you are done cooking shrimp, remove it and set it aside.
Add more olive oil to the same pan if needed and bring it up to a very high heat. Then add all the cherry tomatoes (150 grams) and cook them until they start falling apart, for about 2-3 minutes. Then add 2-3 minced garlic cloves and cook for additional minute.
Add 1/3 cup of wine and cook it or one more minute.
Add 3 tablespoons of butter. As soon as the butter melts, add your 1/2 cup of pasta water and 1/2 cup of chicken broth. Cook the sauce for 3-5 minutes until it reduces slightly.
Add basil and parmesan cheese and mix. Parmesan cheese will slightly thicken the sauce.
Give your sauce a taste and add salt if needed.
Add pasta to the sauce and stir. Garnish everything with parsley and more parmesan.
If you want the shrimp to retain its crispiness you can just add it to the top or side of the pasta. If not, you can mix shrimp right in with the pasta. Enjoy!
