Argentinian Alfajores Cookies
The Story
Alfajores cookies are not your regular chocolate chip or oatmeal cookies (although I love those). These buttery and crumbly sandwich cookies are filled with creamy and sweet dulce de leche. Some claim that the Spaniards brought the recipe of the cookies from the Middle East, and then to South America, where it became very popular. There are variety of recipes for Alfajores and their fillings can vary and include nuts, chocolate, and even fruit. Our recipe’s filling is made with dulce de leche!
Recipe
Ingredients
300 grams of butter
200 grams of sugar
3 eggs
1 cup of flour
500 grams of cornstarch
Pinch of salt
1 teaspoon of vanilla extract
1 teaspoon of baking powder
Instructions
Sift the flour and mix it with cornstarch.
Add salt and baking powder to the mixture.
In a separate bowl take 3 eggs and beat it with sugar and add vanilla.
Add softened butter with flour and cornstarch mixture.
Add mixtures in #3 and #4 together to form a batter, cover with plastic and let it rest in the fridge for 30 minutes.
Now roll out the batter and cut them into cookie forms.
Bake for at 380 degrees F for 7-10 minutes and then let it cool.
Now take 2 cookies and spread the filling and then stick them together like little sandwich. Then roll the cookie in coconut. The coconut will stick to dulce de leche on the side.
