Ricotta Apple Cake

Introduction

This is not your ordinary apple pie, this one is made with cheese! Ricotta cheese to be exact. We love playing around with recipes and creating new ones, and this one turned out to be a success so we decided to share it. Why ricotta cheese? Because it adds something special - it makes the batter of the pie slightly more creamy but not too cheesy. If you eat this pie while its still slightly warm and top it with whipped cream or ice cream, your taste buds will thank you. The slices of apples are right inside this pie, they give it slight tanginess which is well balanced with the sweetness of the batter. Enjoy this pie with a hot drink, tea or coffee or even milk. The recipe is not a difficult one to make. Have fun!

Recipe

Ingredients

  • 200 grams of butter (melted)

  • 1 cup of sugar

  • 450 grams of sifted all purpose flour

  • 200 grams of ricotta cheese

  • 1 teaspoon of baking powder

  • 1 teaspoon of vanilla extract

  • 2 eggs

  • 1/4 teaspoon of salt

  • 5 apples, peeled and sliced.

  • 1/2 teaspoon of of cinnamon powder

  • 1 tablespoon of lemon juice and 1 teaspoon of lemon zest.

Instructions

  1. With mixer, beat all eggs and with all sugar until the sugar melts (about 2-3 minutes). Then add all of the melted butter into the batter. Mix with for one more minute.

  2. Add ricotta cheese to the batter and mix for one more minute. Now add vanilla extract.

  3. Add salt and baking powder to the sifted flour. Add flour to the batter slowly, in 3 batches. The batter is now ready.

  4. Slice and peel apples. Add lemon juice and cinnamon to the apples.

  5. Now take half of the batter into the greased cake pan and spread it. Add all of the apples slices top of the first layer, and then add final second batter on top so that apples will be in the middle of the pie.

  6. Preheat the oven to 465 degrees Fahrenheit and bake the pie for about 1 hour and 15 minutes. Note that every oven is different, so we advise that after an hour you check the batter with a toothpick. Place the toothpick inside the batter and if it comes out clean your pie is ready. If not, bake for a little longer (10-15 more minutes).

  7. Take the pie out of the pan and let it cool. Serve on its own or with ice cream and whipped cream! Enjoy!
