Alfajores Dulce De Leche Cookies
Alfajores cookies are not your regular chocolate chip or oatmeal cookies (although I love those). These buttery and crumbly sandwich cookies are filled with creamy and sweet dulce de leche. Some claim that the Spaniards brought the recipe of the cookies from the Middle East, and then to South America, where it became very popular. There are variety of recipes for Alfajores and their fillings can vary and include nuts, chocolate, and even fruit. Our recipe’s filling is made with dulce de leche. Enjoy!
Ingredients
300 grams of softened, room temperature butter
200 grams of sugar
3 eggs
120 grams of all-purpose flour (1 cup)
500 grams of cornstarch
1/4 teaspoons of salt
1 teaspoon of vanilla extract
1 teaspoon of baking powder
1 can of dulce de leche (13.4 oz/380g)
1 cup of coconut flakes
Directions
Mix the flour with cornstarch, salt, baking powder and then sift everything and set aside. These are your dry ingredients.
In a separate bowl, beat the eggs with sugar and vanilla extract. This should take less than 5 minutes.
Add softened butter to the batter and mix for additional minute or so. Then add dry ingredients from step 1 to the batter and keep mixing for a minute or two until the batter becomes uniform. Cover the batter with plastic and chill in the fridge for at least an hour.
After the batter cools in the fridge, roll it out with a roller to about 1/4-inch thickness (about half of centimeter). Then using the cookie cutter or a glass, cut out the cookies into small circular shapes.
Bake the cookies at 380 degrees Fahrenheit (193 Celsius) for about 10 minutes. Remove from the oven and let them cool.
Take 1 cookie and pipe a layer of dulce de leche on it, or simply spread it with a spoon. Then take another cookie and form a little sandwich. Then roll the side of the cookie in coconut flakes. Repeat the process with the rest of the cookie and enjoy!
