Did you know that the dessert Russian Sharlotka was created in the 19th century by a French chef serving the Russian Tsar in London? Many consider it a light and airy apple sponge cake, rather than a traditional apple pie.

When you take a bite, you’ll notice its delicate texture and how the sweetness of the cake is balanced by the tanginess of the apples.

Serve it warm with tea, coffee, or simply on its own. For a richer finish, you can add a scoop of vanilla ice cream or a spoonful of lightly whipped cream on top.

Ingredients

  • 120 g all-purpose flour (1 cup)
  • 200 g light brown sugar (1 cup)
  • 4 large eggs
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • 5–6 apples (Granny Smith preferred)
  • 1 teaspoon vanilla extract
  • Juice and zest of 1 lemon
  • 1 teaspoon ground cinnamon (optional)
  • 1 tablespoon butter, for greasing the baking dish (or non-stick spray)

Instructions

  1. Preheat the oven to 365°F (185°C).
  2. Peel, core, and slice the apples. Drizzle half of the lemon juice over the apples to prevent oxidation. Add cinnamon (if using) and transfer the apples to a greased baking dish, spreading them evenly.
  3. In a large bowl, beat the eggs. Gradually add the sugar, remaining lemon juice, and lemon zest, mixing for a few minutes until well combined.
  4. In a separate bowl, combine the flour, baking powder, and salt, then sift the mixture.
  5. Gently fold the dry ingredients into the batter, being careful not to overmix. Once the flour is fully incorporated, the batter is ready.
  6. Pour the batter evenly over the apples in the baking dish.
  7. Bake for 30–35 minutes, then check for doneness with a toothpick. If it comes out clean, the cake is ready. If not, continue baking for an additional 5–10 minutes until fully set.
  8. Let cool slightly before serving. Enjoy!
