Recipe
Ingredients
270 grams of flour
100 grams of brown sugar (1/2 cup)
1/2 cup of chocolate chips
2 teaspoons of baking powder
1/4 teaspoon of salt
1 tablespoon of orange zest
4 tablespoons of orange juice
170 g of cold, unsalted butter
1 teaspoon of vanilla extract
1 egg
1/2 cup of full fat sour cream
Instructions
Combine together: the flour, sugar, baking powder, salt, orange zest and chocolate chips.
Cut the butter into the small pieces (size of peas). The butter should be extra cold. Now slowly start mixing the pieces of butter with all dry ingredients until the mixture comes together. The butter should NOT be melted inside the batter.
Now combine all of the wet ingredients together: the egg, sour cream, vanilla extract, and orange juice.
Take the first batter that you made (from step 2) and form a small well with a hole in it. Place the mixture of wet ingredients into that hole and mix the batter together with hands, until the batter forms into a ball. Cover the batter in plastic and refrigerate it for an hour. Again, the goal is not to overmix the batter to the point the butter should melt. You should still see pieces of butter within the scone batter.
Preheat the oven to 385 degrees Fahrenheit (196 Celsius).
Take the batter out of the fridge and roll the dough out. Cut the dough into small triangles of your preferred size. Note that the thickness of our scones was about 1 cm (0.4 inches). Place the mini scones on a greased baking tray and bake for about 20-25 minutes until the scones are golden. Enjoy!
