Ricotta Apple Cake

This delicate apple ricotta cake is moist, tangy and not overly sweet. The unique combination of apples and creamy ricotta cheese creates perfect harmony with each bite. Most importantly, this recipe is perfect for those who want to be able to bake delicious desserts without spending hours in the kitchen following complicated instructions. Ingredients

  • 200 grams of butter (melted)

  • 200 grams of granulated sugar (1 cup)

  • 450 grams of sifted all-purpose flour

  • 200 grams of ricotta cheese

  • 1 teaspoon of baking powder

  • 1 teaspoon of vanilla extract

  • 2 eggs

  • 1/4 teaspoon of salt

  • 5 apples, peeled and sliced

  • 1/2 teaspoon of cinnamon powder

  • 1 tablespoon of lemon juice and 1 teaspoon of lemon zest

Directions

  1. With a hand mixer or a whisk, beat the eggs and sugar for about 3 to 5 minutes. Then add all of the melted butter into the batter and mix for additional 2 minutes.

  2. Next add the ricotta cheese and vanilla extract to the batter. Mix for additional 2 minutes.

  3. Add the salt and baking powder to the flour and then sift these dry ingredients together. Then add the flour to the batter slowly in batches while mixing the batter until it is uniform. Do not overmix the batter.

  4. Slice and peel the apples and mix them with the lemon juice, lemon zest, and cinnamon powder.

  5. Add about half of your cake batter and spread it on a greased cake pan, creating the first layer of your cake. Add all of the apples on top of the first layer, and then add the rest of the batter on top of apples.

  6. Preheat your oven to 365 degrees Fahrenheit (185 Celsius) and bake the cake for about 1 hour and 15 minutes. Note that every oven is different, so we advise that after an hour you check the batter with a toothpick. Place the toothpick inside the batter and if it comes out clean, then your cake is done. If not, bake it for a little longer until the toothpick comes out clean (10-15 more minutes).

  7. Take the pie out of the pan and let it cool. Enjoy!
