Syrniki - Eastern European Cheese Pancakes

Intro:

Syrniki, delicious Eastern European cheese pancakes. These are usually made with farmers cheese/trovor, but ricotta cheese can be used as a substitute. They taste incredibly delicious, cheesy, and require little time to prepare. We love to eat them with berries, sour cream and honey. You can use anything you’d like, from your favorite jam, whip cream or even maple syrup. Enjoy!

Ingredients:

  • 400 grams of trovor

  • 1 egg, beaten

  • about 40-50 grams of all purpose flour

  • pinch of salt (1/8 teaspoon)

  • 1/2 teaspoon of vanilla extra

  • 1 tablespoon of sugar (can add more for those with a sweet tooth).

  • 1 tablespoon of butter

  • 1 tablespoon of vegetable oil

Instructions:

1) In a bowl combine and stir: tvorog, beaten egg, vanilla extract, salt. Then add flour, little by little, and mix again. Add sugar the last.

Examine your batter, if you are using ricotta cheese instead of tvorog, you may want to add a bit more flour to the mixture so that it won't be sticky.

2) Add the batter to the floured surface. Roll the dough into a log, and then divide it into equal portions/balls. Flatten each ball into a disk, like a small pancake, and then dust it with flour from both sides.

3) Heat up the cooking pan to the medium heat (non-stick pan preferred). Take your small syrnikis and cook them for about 2-3 minutes on each side, until they become golden. Then cover the pan and cook for additional 3-5 minutes. Make sure that your syrniki don't burn.

4) Remove from heat. Enjoy!
