Strawberry Galette

Introduction

Galette, or flat cake, is a delicious pastry originating in France. Imagine biting into a warm, buttery, crumbly dough and sweet berries - so good! Think this recipe is difficult to make? Think again. Preparing this galette does not involve hours of baking or following complicated steps. Just make the dough, add berries, put it in the oven and bake. I promise you will love this galette on its own, or topped with ice cream or whip cream. You can even make this galette with apples, pears, or any other fruit that you love.

Ingredients

  • 250g of all all purpose flour

  • 110 g of butter, cold

  • 1/4 teaspoons of salt

  • 1/2 teaspoons of baking powder

  • 4-5 tablespoons of brown sugar

  • 1 egg

  • 1 teaspoon of vanilla extract

  • 5 tablespoons of icy cold water

  • 2 tablespoons of cornstarch

  • about 1 lb of strawberries (or any other fruit)

Instructions

  1. Sift the flour and add 2-3 tablespoons of brown sugar to it, depending on your preference for sweetness. Then add all of baking powder and salt into the mixture.

  2. Add egg and vanilla right into the middle of your batter.

  3. Shred the cold butter and add tiny pieces of shredded butter into the mixture. Then start adding water to the mixture, one tablespoon at a time, and keep mixing until a dough ball forms.

  4. Cover the dough ball and let it rest in the fridge for at least an hour.

  5. Wash and dry your strawberries (or any other fruit) and cut them into preferred pieces.

  6. Take the dough out of the fridge and roll it out to about 10-12”diameter (25-28cm), more or less. The shape of the dough does not have to be perfect! Place the dough right on the parchment paper.

  7. Sprinkle 1 1/2 tablespoons of cornstarch on the dough, leaving about 2-2.5” (5-7cm) of edges out.

  8. Take the remaining 1/2 tablespoons of cornstarch and combine it with strawberries. Place the strawberries on the rolled out dough and start folding the dough, as pictured below.

  9. Take 1 to 2 tablespoons of brown sugar (depending on your preference) and sprinkle it on strawberries and on the sides of the dough.

  10. Preheat the oven to 380 degrees F (193 Celsius) and bake for about 45 minutes up to an hour, depending on your oven. After your galette is ready, you can eat it with ice cream, whipping cream or on its own. You can even add a bit of glaze on top.
