Tomato & Cucumber Salad

Spring is here! Why not add this simple salad to compliment it with any meal. Whether feeding a crowd or eating on our own, I always make this fresh salad because it never gets old. This recipe does not require detailed instructions and complicated steps. What I used in my own salad illustrated above includes:

  • Tomatoes

  • Cucumbers

  • Radish

  • Leeks

  • Parsley

  • Feta cheese

  • Olive oil

  • Freshly squeezed lemon juice

  • Some salt

Cut up your own vegetables that you have in the fridge, most including tomatoes and cucumbers. If you have radishes and leeks, you can add it, but if you don’t just add what you have! You can use red onion as well or even avocados. The most important part of this salad is freshness of vegetables, good quality of olive oil and a bit of acidity for which you can either use freshly squeezed lemon juice or vinegar.

Tip - use acidity and salt sparingly. I hope reading this short blog post inspires you to make salad similar to this one, but with your own twist!
