Brown Rice Stir Fry with Vegetables

Intro

We are often told that we should eat more whole grains, but will satisfying our body with this nutritious food also satisfy our tastebuds? I would say, not always. Sometimes whole grains can be bitter, bland and tasteless (especially whole grain pasta), but thankfully, we can enhance their flavors with foods like garlic, lemon, vegetables, and a bit of butter, which is exactly what I did to my bland leftover brown rice. I stir-fried it with frozen spinach, mushrooms, some fresh carrots, onions as well as parsley. I hope you find the recipe of the stir-fry delicious!

Recipe

Ingredients

  • 2 cups of cooked brown rice

  • 1 cup of frozen spinach

  • About 10 oz of mushrooms of your choice

  • 1/2 to 1 fresh carrot, julienned

  • Half of chopped yellow onion

  • Some chopped green onions and parsley for garnish

  • About 1-2 tablespoons of olive oil

  • About 1/2 to 1 tablespoon of butter (optional)

  • 2-3 garlic cloves, minced

  • Some lemon juice (about a tablespoon)

  • Some salt and black pepper

Instructions

  1. Preheat the pan with some olive oil.

  2. Add mushrooms and cook them about 5 minutes until most of the liquid evaporates, enhancing their flavor. Then add garlic and cook for about 30 more seconds.

  3. Add frozen spinach, carrots, and yellow onions and cook everything for few more minutes on high heat (3-5 minutes). Add some salt and black pepper.

  4. Add brown rice and butter and continue to stir fry everything on high heat for 5 additional minutes.

  5. Squeeze some lemon juice and garnish the rice with lots of parsley and green onions. Mix everything and turn off the heat. Enjoy!
